Prepare Strawberry Filling
- Combine fresh or frozen strawberries, sugar, and lemon juice in a medium saucepan. Cook over medium heat for about 10 minutes until thickened, stirring occasionally.
- Once thickened, blend until smooth and cool in the fridge.
Make Brioche Dough
- In a stand mixer, combine warm milk and yeast. Let sit for 5 minutes until foamy.
- Add flour, sugar, salt, butter, and egg. Knead on medium speed for 5-7 minutes until smooth.
First Rise
- Grease a bowl and place the dough inside. Cover and let rise in a warm area for 2 hours.
Shape Rolls
- Punch down the dough and roll it into a rectangle. Spread the cooled filling and roll tightly into a log.
- Slice into 12 rolls.
Second Rise
- Place rolls in a greased baking dish and cover. Let rise for 30-60 minutes until puffy.
Bake
- Preheat oven to 350°F (175°C). Bake rolls for 20-25 minutes until golden.
Make Glaze
- Combine cream cheese, powdered sugar, vanilla, and some strawberry puree. Beat until smooth.
Glaze and Serve
- Spread the glaze over warm rolls and enjoy!
