Ingredients
  

Dough Ingredients
  • 1 cup warm milk for yeast activation
  • 2 teaspoons instant dry yeast can substitute with active dry yeast
  • 4 cups all-purpose flour or bread flour
  • 1/4 cup granulated sugar adjust to taste
  • 1 teaspoon salt for flavor
  • 1 large egg room temperature
  • 1/2 cup unsalted butter very soft
Strawberry Filling Ingredients
  • 2 cups fresh or frozen strawberries fresh preferred
  • 1 tablespoon lemon juice to brighten flavor
Cream Cheese Glaze Ingredients
  • 8 oz cream cheese softened
  • 2 cups powdered sugar for sweetness
  • 1 teaspoon vanilla extract optional

Method
 

Prepare Strawberry Filling
  1. Combine fresh or frozen strawberries, sugar, and lemon juice in a medium saucepan. Cook over medium heat for about 10 minutes until thickened, stirring occasionally.
  2. Once thickened, blend until smooth and cool in the fridge.
Make Brioche Dough
  1. In a stand mixer, combine warm milk and yeast. Let sit for 5 minutes until foamy.
  2. Add flour, sugar, salt, butter, and egg. Knead on medium speed for 5-7 minutes until smooth.
First Rise
  1. Grease a bowl and place the dough inside. Cover and let rise in a warm area for 2 hours.
Shape Rolls
  1. Punch down the dough and roll it into a rectangle. Spread the cooled filling and roll tightly into a log.
  2. Slice into 12 rolls.
Second Rise
  1. Place rolls in a greased baking dish and cover. Let rise for 30-60 minutes until puffy.
Bake
  1. Preheat oven to 350°F (175°C). Bake rolls for 20-25 minutes until golden.
Make Glaze
  1. Combine cream cheese, powdered sugar, vanilla, and some strawberry puree. Beat until smooth.
Glaze and Serve
  1. Spread the glaze over warm rolls and enjoy!
