  • 1 lb large raw shrimp, peeled and deveined pre-cooked shrimp can be used for quicker prep
For the Seasoning
  • 1 tsp smoked paprika can be replaced with regular paprika
  • 0.5 tsp Italian seasoning can be substituted with dried thyme or oregano
  • 0.25 tsp salt adjust according to taste
  • 0.25 tsp black pepper freshly ground is preferable
For the Sauce
  • 5 cloves garlic, minced add extra for more zing
  • 2 tbsp olive oil can be replaced with avocado oil
  • 4 oz sun-dried tomatoes, chopped substitute with fresh tomatoes if in season
  • 14 oz artichoke hearts, drained and chopped canned mushrooms can be used as a substitute
  • 4 oz fresh spinach can replace with kale or Swiss chard
  • 1 cup heavy cream for dairy-free, use coconut cream

Step‑by‑Step Instructions for Creamy Tuscan Shrimp
  1. Season the shrimp with smoked paprika, Italian seasoning, salt, and black pepper. Heat olive oil in a large skillet over medium-high heat. Add the shrimp and minced garlic; sear for about 2 minutes on each side until pink and opaque. Remove and set aside.
  2. In the same skillet, reduce heat to medium and add sun-dried tomatoes and artichoke hearts. Sauté for 1 minute, then add spinach and stir until wilted, about 1-2 minutes.
  3. Pour in heavy cream and add additional smoked paprika. Stir and let simmer for about 1 minute to thicken. Adjust seasoning to taste.
  4. Return the shrimp to the skillet, coating with sauce. Simmer for another 2 minutes over low heat, then serve hot.
