Method
 

Preparation
  1. Prepare the Streusel Topping by whisking together flour, sugar, and salt, then mixing in melted butter until crumbly.
  2. Mix Dry Ingredients: Combine flour, baking powder, and salt in a large mixing bowl.
  3. Combine Wet Ingredients: In a separate bowl, whisk together egg, sugar, vegetable oil, vanilla extract, and yogurt until smooth.
  4. Combine Mixtures: Gently fold wet ingredients into dry ingredients and add diced strawberries.
  5. Make Cream Cheese Filling by beating cream cheese, sugar, vanilla extract, and cornstarch until smooth.
  6. Assemble Muffins by preheating the oven, lining a muffin tin, filling with batter, adding cream cheese filling, and topping with streusel.
  7. Bake muffins at 425°F for 5 minutes, then reduce to 350°F for another 15-20 minutes.
