- Thaw puff pastry at room temperature for 30-60 minutes, covered with a towel to prevent drying out.
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Prepare the cream cheese filling by beating together cream cheese, sugar, vanilla extract, and optional food coloring until smooth. Fold in half of the diced strawberries.
- Roll out the puff pastry on a floured surface to about 1/8 inch thick and cut out heart shapes.
- Fill each heart-shaped pastry with 1-2 tablespoons of cream cheese filling and top with remaining strawberries.
- Create an egg wash by whisking egg and cold water, then brush the edges of the pastries.
- Bake the pastries for 12-15 minutes until golden brown and puffed.
- Let danishes cool on a wire rack briefly before serving warm.
