  • 1 cup Flour all-purpose flour recommended
  • 2 teaspoons Baking Powder

  • 1 teaspoon Cinnamon
  • 1/4 teaspoon Nutmeg
  • 1 large Egg
  • 1 cup Milk buttermilk can be used
  • 1 teaspoon Vanilla
  • Oil for frying use high smoke point oil
For the Glaze
  • 1 cup Icing Sugar can substitute with powdered erythritol
  • 2 tablespoons Milk
  • 1 teaspoon Vanilla

Method
 

Preparation Steps
  1. Finely chop fresh rhubarb and mix with sugar; let it sit for 10 minutes.
  2. In a bowl, whisk flour, baking powder, salt, cinnamon, and nutmeg together.
  3. Beat the egg, then mix in milk and vanilla extract until smooth.
  4. Fold the wet mixture into the dry ingredients, then gently incorporate the marinated rhubarb.
  5. Heat oil in a skillet to 350°F (175°C).
  6. Fry heaping tablespoons of batter for about 2 minutes on each side.
  7. Drain fritters on paper towels and drizzle with glaze made from icing sugar, milk, and vanilla.
