Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x5 loaf pan.
  2. Whisk together the flour, cocoa powder, baking soda, salt, and espresso powder in a large mixing bowl.
  3. In a stand mixer, combine olive oil, brown sugar, and granulated sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream followed by mashed bananas.
  4. Slowly combine the dry ingredients with the wet ingredients, mixing on low until just combined.
  5. Dredge chocolate chips in flour and gently fold into the batter, reserving some for topping.
  6. Pour the batter into the prepared pan, sprinkle reserved chocolate chips and banana slices on top, and bake for 55-65 minutes.
  7. Remove from oven and cool in the pan for 20 minutes before transferring to a wire rack to cool completely before slicing.
