Method
 

Preparation Steps
  1. In a mixing bowl, combine 1 cup of mascarpone cheese with 2 tablespoons of espresso powder. Use a hand mixer on low speed for about 1 minute until smooth.
  2. Gently fold in 1 cup of heavy whipping cream into the mascarpone mixture with a spatula until well incorporated.
  3. Brew a strong cup of coffee in a shallow dish and let it cool. Dip each ladyfinger into the coffee for 2-3 seconds.
  4. Layer soaked ladyfingers in a suitable container and spread mascarpone mixture. Repeat until all ingredients are used, finishing with mascarpone.
  5. Cover the container with plastic wrap and freeze for at least 6 hours or overnight.
  6. Before serving, let the ice cream sit at room temperature for 5-10 minutes, then scoop and dust with cocoa powder.
