  • 1 tsp Ground Cumin Smoked paprika can be substituted.
  • Salt and Pepper Adjust to taste.
For the Rice Layer
  • 1 cup Jasmine Rice Basmati rice can also work.
  • 2 cups Chicken Broth Vegetable broth is a great substitute.
For the Avocado Mix
  • 1 piece Diced Avocado Firm tofu can be used for texture.
  • 1/4 cup Finely Chopped Red Onion Green onions can be used.
  • 1/4 cup Fresh Cilantro Parsley can be a good alternative.
  • 1 tbsp Olive Oil
For Serving
  • Lime Wedges For an extra zesty kick.

Preparation Steps
  1. Prepare the marinade by whisking together honey, lime juice and zest, minced garlic, cumin, salt, and pepper in a mixing bowl.
  2. Marinate the chicken in a resealable bag with the honey lime marinade for at least 30 minutes.
  3. Cook the jasmine rice by rinsing it, bringing chicken broth to a boil, and simmering the rice until tender.
  4. Preheat the grill to medium-high heat and grill the chicken until fully cooked.
  5. Prepare the avocado mixture by combining diced avocado, red onion, cilantro, and olive oil in a mixing bowl.
  6. Assemble the stack starting with jasmine rice, topped with grilled chicken and the avocado mix.
  7. Serve the dish with lime wedges on the side.
