Preparation
- Preheat your oven to 350°F (175°C).
- Prepare fresh corn by cutting kernels off 8–10 ears, or drain 5 cups canned corn.
- Butter your casserole dish with 1 tablespoon of melted butter.
- In a mixing bowl, whisk together eggs, half and half, salt, pepper, and nutmeg.
- Add corn, crushed oyster crackers, and 2 tablespoons of melted butter to the wet ingredients.
- Pour the mixture into the buttered casserole dish and top with shredded cheddar cheese.
- Mix remaining crushed oyster crackers with 1 tablespoon melted butter and sprinkle on top.
- Bake for 45-50 minutes until golden and slightly loose in the center.
- Let it rest for a few minutes before serving.
