  • 2 large Eggs Provides structure and richness
  • 1 cup Half and Half Can substitute with whole milk

  • 1/8 teaspoon White Pepper Mild heat
  • few grinds Fresh Nutmeg Aromatic warmth
For the Topping
  • 3/4 cup Crushed Oyster Crackers For crispy topping
  • 3 tablespoons Melted Butter Rich flavor; unsalted preferred
  • 1/2 cup Sharp Cheddar Cheese, shredded For savory richness
  • Paprika For garnish

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Prepare fresh corn by cutting kernels off 8–10 ears, or drain 5 cups canned corn.
  3. Butter your casserole dish with 1 tablespoon of melted butter.
  4. In a mixing bowl, whisk together eggs, half and half, salt, pepper, and nutmeg.
  5. Add corn, crushed oyster crackers, and 2 tablespoons of melted butter to the wet ingredients.
  6. Pour the mixture into the buttered casserole dish and top with shredded cheddar cheese.
  7. Mix remaining crushed oyster crackers with 1 tablespoon melted butter and sprinkle on top.
  8. Bake for 45-50 minutes until golden and slightly loose in the center.
  9. Let it rest for a few minutes before serving.
