Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Prepare ingredients for a smooth cooking experience.
  2. Cube the butternut squash, toss with olive oil, salt, and pepper. Roast on a baking sheet for 30 minutes, turning halfway.
  3. Halve the Brussels sprouts, toss with olive oil, salt, and pepper. Add to the oven after 10 minutes with the squash.
  4. Boil a large pot of salted water and cook cheese tortellini according to package instructions, about 3-5 minutes.
  5. In a skillet, heat olive oil and sear seasoned chicken thighs for about 4 minutes on each side.
  6. Sauté minced garlic in the skillet for 1 minute, then add butter, and incorporate cooked tortellini.
  7. Fold in the seared chicken thighs, roasted butternut squash, and Brussels sprouts. Warm through.
  8. Garnish with fresh thyme and serve on plates.
