- Prepare the grill by preheating it to medium or medium-high heat, between 350°F to 450°F. Lightly coat the grill grates with cooking spray or oil.
- Cut the pineapple to create flat surfaces, removing the skin and cutting it into spears or thick rings—approximately one inch in thickness.
- In a mixing bowl, combine brown sugar and ground cinnamon, and generously sprinkle over each pineapple spear.
- Grill pineapple spears for about 4 to 5 minutes on each side until golden brown with clear grill marks.
- Remove from heat and allow to cool slightly before serving as a dessert or alongside ice cream or grilled meats.
