For the Sandwich

  • 1 cup Cucumbers Provide a refreshing crunch; zucchini can be used as an alternative.

  • 1 cup Mozzarella Adds creaminess and mild flavor; feta or goat cheese can be used for tang.

Step-by-Step Instructions
  1. In a blender or food processor, combine fresh chives, mayonnaise, tarragon, yogurt, lemon zest, lemon juice, and olive oil. Blend until smooth and creamy, about 30 seconds. Taste and season with salt and pepper, then set aside.
  2. In a medium bowl, add crisp lettuce leaves and sliced cucumbers. Squeeze fresh lemon juice over the veggies, drizzle with olive oil, and sprinkle with salt and pepper. Toss well to coat.
  3. Take two slices of bread and smash a ripe avocado on each, seasoning with salt and pepper. Layer the dressed lettuce and cucumbers on one slice, followed by mozzarella cheese and sprouts. Spread the dressing on the other slice.
