  • 1.5 pounds Chicken Breasts Cut into 1-inch cubes
  • 0.25 cups Olive Oil Extra virgin
  • 1 Juice Lemon Freshly squeezed
  • 3 cloves Garlic Minced
  • 2 teaspoons Dried Oregano
  • 1 teaspoon Paprika
  • Salt To taste

For the Feta Dip
  • 1 cup Feta Cheese Crumbled
  • 0.5 cups Plain Greek Yogurt
  • 1 tablespoon Lemon Zest Fresh
  • 0.5 Juice Lemon
  • 1 clove Minced Garlic
  • Fresh Dill A handful
For Serving
  • 1 cup Cherry Tomatoes
  • 1 cup Sliced Cucumbers
  • 1 cup Kalamata Olives
  • 1 cup Roasted Red Peppers
  • 8 Wooden Skewers Soaked in water
  • Fresh Herbs (parsley, mint, dill) For garnish

Method
 

Preparation
  1. In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, paprika, salt, and pepper. Ensure well combined.
  2. Cut chicken breasts into cubes and add to the marinade, stirring gently. Cover and marinate in the refrigerator for at least 30 minutes.
  3. Soak wooden skewers in water for at least 30 minutes. Once soaked, thread marinated chicken onto the skewers, spacing evenly.
  4. Preheat grill to medium-high heat (about 400°F).
  5. Place skewers on the grill and cook for 8-10 minutes, turning occasionally until golden brown and internal temperature reaches 165°F.
  6. In a food processor, combine feta cheese, Greek yogurt, olive oil, lemon zest, lemon juice, minced garlic, and dill. Blend until smooth.
  7. Arrange the grilled skewers on a serving board alongside bowls of feta dip, kalamata olives, roasted red peppers, cherry tomatoes, and sliced cucumbers.
  8. Garnish with fresh herbs before serving.
