For the Vinaigrette
  • 2 tablespoons Maple Syrup Can be substituted with honey.
  • 1/4 cup Balsamic Vinegar Use good quality for best flavor.
  • 1/4 cup Olive Oil
  • 1 teaspoon Garlic Powder Or fresh minced garlic.
  • 1 teaspoon Dijon Mustard

Method
 

Cooking Instructions
  1. Cook the Orzo. Bring salted water to a boil, add orzo and cook until al dente, about 8-10 minutes. Drain and cool.
  2. Prepare the Oven and Vegetables. Preheat to 400°F (200°C). Arrange butternut squash, Brussels sprouts on a baking sheet, spray with avocado oil, and sprinkle with salt.
  3. Roast the Veggies. Roast for 20-25 minutes, stirring halfway, until tender and caramelized.
  4. Whisk the Vinaigrette. Combine balsamic vinegar, olive oil, maple syrup, Dijon mustard, garlic powder, and water in a bowl. Whisk until smooth.
  5. Combine the Salad Ingredients. In a serving bowl, mix cooled orzo, roasted veggies, and vinaigrette. Toss gently.
  6. Final Touches Before Serving. Let cool to room temperature, then sprinkle goat cheese on top before serving.
