Ingredients

For the Cookie Base
  • 1 box White or Yellow Cake Mix (13.25 oz.) Substitution: Funfetti or strawberry cake mix can add a pop of flavor and color!
  • ¼ cup All-Purpose Flour Helps ensure the dough holds together beautifully.
  • 8 tablespoons Unsalted Butter, Melted and Cooled Tip: Allow butter to cool before mixing to avoid cooking the eggs.
  • 1 large Egg Essential for binding.
  • 1 large Egg Yolk Keep it as is for the best results!
  • 2 teaspoons Pure Vanilla Extract No known substitutes; vanilla is irreplaceable in this recipe.
For Rolling the Cookies
  • ¼ cup Granulated Sugar (for rolling) Optional but highly recommended for added texture and appeal.
For the Ganache Filling
  • 1 cup White Chocolate Chips Opt for high-quality chocolate for a richer flavor.
  • ¼ cup Heavy Cream No substitutes for creaminess.
For Decoration
  • 58 pieces M&Ms (or 2 per cookie cup) Use pastel-colored M&Ms for a festive look.

Equipment

  • mini muffin tin
  • Mixing Bowl
  • spoon

Method

Baking Instructions
  1. Preheat your oven to 325°F (160°C) and spray a mini muffin tin with nonstick cooking spray.
  2. In a large mixing bowl, whisk together the cake mix and flour, then add melted butter, egg, egg yolk, and vanilla extract to form a cohesive dough.
  3. Scoop tablespoon-sized dough portions, roll them into balls, and optionally roll in granulated sugar before placing them into the muffin cups.
  4. Bake for 14 minutes, watching for slight puffing and cracks on the surface.
  5. Press the back of a spoon into the center of each cookie to form small cups and allow to cool for 5-10 minutes.
  6. Transfer to a wire rack and cool completely for another 10-15 minutes.
  7. Microwave white chocolate chips and heavy cream in 30-second increments, stirring until melted, to prepare the ganache.
  8. Once cooled, fill the cookie cups with ganache and top with M&Ms to resemble bunny faces.
  9. Allow the ganache to set for about 2 hours at room temperature.
