  1. Make the Dough: In a stand mixer, combine lukewarm water, sugar, fresh yeast, lemon zest, dark rum, and vanilla extract. Whisk, then gradually add flour, fine sea salt, and nutmeg. Knead for 5-8 minutes, incorporate unsalted butter, refrigerate overnight.
  2. Shape and Proof: Punch down the dough, knead gently, divide into 18 portions, shape into balls, and let rise for 2-4 hours in a warm place.
  3. Fry the Doughnuts: Heat vegetable oil to 170-180°C. Fry doughnuts for 3-4 minutes on each side, remove and drain on paper towels.
  4. Prepare Chocolate Filling: Whisk together powdered sugar, cocoa powder, and salt. Boil water, mix with unsalted butter until melted, then whisk into cocoa mixture until smooth. Cool in fridge until spreadable.
