  • 1 tbsp Cornstarch arrowroot powder as alternative
  • 1/2 cup White Chocolate Chips dark chocolate for a different flavor

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare your baking pan with parchment paper.
  2. Combine graham cracker crumbs, sugar, and melted butter in a bowl; press into the bottom of the prepared pan.
  3. Beat cream cheese and sugar together until smooth. Add sour cream and vanilla, then mix in the eggs one at a time.
  4. Pour filling over crust and bake for 25-35 minutes until slightly jiggly in the center. Cool for 1-2 hours.
  5. Cook fresh strawberries, sugar, water, lemon juice, and cornstarch over medium heat until thick, about 10-15 minutes.
  6. Chill cheesecake bars for 3-4 hours. Serve topped with strawberry sauce and drizzled white chocolate.
