For the Lasagna Assembly
  • 9-12 pieces Lasagna Noodles Cooked al dente; can be regular or gluten-free
  • ½ cup Grated Parmesan Cheese Use nutritional yeast for dairy-free option
  • 1 tablespoon Italian Seasoning
  • 1 teaspoon Paprika
  • 1 teaspoon Dried Basil

Method
 

Preparation Steps
  1. Prepare the Butternut Squash Filling by blending the butternut squash, ricotta cheese, milk, salt, and nutmeg in a food processor until creamy.
  2. Prepare the Spinach Filling by mixing the spinach, ricotta, mozzarella, garlic, salt, and pepper in a large bowl until well combined.
  3. Cook the lasagna noodles in salted boiling water until al dente, following package instructions, then drain and rinse under cold water.
  4. Layer the lasagna starting with butternut squash filling, followed by noodles, spinach filling, and mozzarella; repeat layers and finish with squash and cheese on top.
  5. Bake the lasagna covered with foil at 375°F (190°C) for 30 minutes, then remove foil and bake for an additional 10-15 minutes until cheese is bubbly.
  6. Rest the lasagna for 10-15 minutes before slicing and serving.
