  1. In a nonstick skillet, combine diced tomatoes, onion, jalapeño, and spices over medium heat. Simmer for about 5 minutes until salsa thickens slightly.
  2. In the same skillet, add a splash of olive oil and the reserved salsa, mixing in refried beans. Cook for about 5 minutes until heated through and creamy.
  3. Heat a tablespoon of olive oil in a cast iron skillet. Fry each corn tortilla for about 20 seconds on each side until golden and crispy.
  4. Return to the now-empty skillet and add a little more olive oil. Crack eggs into the skillet and fry for approximately 2.5 minutes for sunny-side-up eggs.
