Preparation Steps
  1. In a medium sauce pot, combine pitted fresh sweet cherries with enough water to cover them. Bring to a boil, then reduce to simmer and mash cherries for 15 minutes.
  2. Transfer the cherry mixture to a blender, adding raw honey, lime zest, and lime juice. Blend until smooth, and strain if desired. Chill in the refrigerator.
  3. Fill glasses with ice, add 2 ounces of chilled cherry syrup, and top with club soda.
  4. For a pitcher, combine cherry syrup with club soda in a large pitcher filled with ice. Stir gently.
  5. Store any leftover cherry syrup in an airtight container in the refrigerator or freeze in ice trays.
