- Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with heavy-duty non-stick aluminum foil.
- Melt ½ cup of unsalted butter in a microwave-safe bowl and allow it to cool slightly.
- Whisk together melted butter, 1 egg, 1 cup of light brown sugar, ½ teaspoon of kosher salt, and 1 teaspoon of vanilla extract until combined.
- Sift in 1 cup of all-purpose flour, 1 teaspoon of baking powder, 1 teaspoon of ground cinnamon, and ½ teaspoon of ground nutmeg and stir gently until just combined.
- Fold in 1 cup of freshly grated carrots until evenly distributed.
- In a separate bowl, beat together 8 ounces of softened cream cheese, 1 egg yolk, and ¼ cup of granulated sugar until smooth.
- Pour the carrot batter into the prepared baking pan, dollop the cream cheese mixture on top, and swirl it through the carrot batter.
- Bake for 25–30 minutes until a toothpick comes out clean.
- Allow the bars to cool in the pan for at least 2 hours before slicing.
