Ingredients
  

For the Meatballs
  • 1 pound Ground Chicken Can substitute with ground turkey or lamb.
  • 1 cup Bread Crumbs Use gluten-free bread crumbs to keep it gluten-free.
  • 1 large Egg Essential for binding the meatballs.
  • 1 tablespoon Fresh Ginger Grated, or use ground ginger if necessary.
  • 3 cloves Garlic Minced for enhanced flavor.
  • 1 tablespoon Garam Masala Authentic Indian spice blend.
  • 1 teaspoon Chili Powder Adjust to desired heat.
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 tablespoons Butter Unsalted, for richness.
  • 2 tablespoons Olive Oil For cooking the meatballs.
For the Sauce
  • 1 medium Yellow Onion Diced.
  • 2 tablespoons Tomato Paste
  • 1 cup Chicken Stock Can substitute with vegetable broth.
  • 1 cup Coconut Milk Substitute with heavy cream if preferred.
  • 1 tablespoon Curry Powder Adjust based on heat preference.
  • 1 cup Orzo Uncooked, can swap for rice or quinoa.
  • 2 cups Baby Spinach Leaves Can use kale or other greens.
For Garnish and Serving
  • 1/4 cup Cilantro Chopped.
  • 1/2 cup Greek Yogurt Optional.
  • 2 pieces Lime Wedges
  • 4 pieces Naan

Method
 

Instructions
  1. In a large mixing bowl, combine ground chicken, bread crumbs, egg, grated ginger, minced garlic, garam masala, chili powder, salt, and pepper. Mix until well combined.
  2. Heat a large skillet over medium-high heat and add unsalted butter. Once melted, brown the meatballs for about 3-4 minutes on each side.
  3. In the same skillet, add olive oil and sauté the diced yellow onion until translucent.
  4. Stir in the tomato paste and cook for 1 minute, then add chicken stock and coconut milk.
  5. Add the uncooked orzo and return the browned meatballs to the skillet, simmer until orzo is almost al dente.
  6. Fold in the baby spinach leaves and cook until wilted.
  7. Garnish with cilantro and serve warm with Greek yogurt and lime wedges.

Notes
