  • 1 tbsp Lemon Juice Any vinegar can be used as a variation.
  • 2 tbsp Parmigiano Cheese Feel free to substitute with Parmesan or Pecorino Romano.

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry until it’s about ¼ inch thick and place it on the prepared baking sheet.
  3. Score a half-inch border around the perimeter and prick the inner section with a fork.
  4. Whisk together 1 egg and 1 tablespoon of water for the egg wash, then brush it over the pastry and sprinkle with seasoning.
  5. Bake for 10 minutes or until golden.
  6. Spread Boursin cheese on the warm crust, create wells, and crack eggs on top, sprinkle salt.
  7. Bake for an additional 12-14 minutes, ensuring the whites are set.
  8. Toss arugula with olive oil, lemon juice, and salt.
  9. Top the tart with the arugula salad and Parmigiano cheese before serving.
