  1. Start by gathering all your colorful vegetables, shiitake mushrooms, and creamy avocado. Rinse and slice cucumber, bell peppers, and carrots into thin matchsticks. If you're using noodles, bring a pot of water to boil and cook them according to package instructions, about 3 to 5 minutes. Drain and set aside. Prepare your workspace with all ingredients close at hand for efficient assembly of your Avocado Shiitake Spring Rolls.
