Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease and line an 8-inch round cake pan with parchment paper.
  2. In a mixing bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking powder, baking soda, and salt.
  3. In a separate large bowl, beat the softened unsalted butter and granulated sugar together until light and fluffy.
  4. Add the eggs one at a time to the butter-sugar mixture, mixing well after each addition. Then, stir in the vanilla extract.
  5. Gradually mix in the dry ingredient mixture, alternating with the buttermilk until just combined.
  6. Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes, or until a toothpick comes out clean.
  7. Once baked, let the cake cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

  12. Once the cake is cool, slice it in half horizontally and layer the raspberry mousse between the two halves.
  13. Chill the assembled cake in the refrigerator for at least 1 hour.
  14. For the ganache, heat the heavy cream in a saucepan until boiling, then pour it over the chopped dark chocolate and stir until smooth.
  15. Drizzle the ganache over the chilled cake just before serving.
