Step-by-Step Instructions
  1. Brine the Chicken: Slice the chicken into bite-sized pieces and marinate in pickle juice and dill for at least 1 hour.
  2. Prepare the Coating: Crush cornflakes, and set up bowls for flour, egg, and crushed cornflakes.
  3. Heat the Fry Oil: Heat oil in a deep pan to 350°F; test with a small piece of chicken.
  4. Coat the Chicken: Dredge chicken in flour, dip in egg, and coat with cornflakes.
  5. Fry the Chicken: Fry the coated chicken bites until crispy and golden brown, about 6-8 minutes.
  6. Make the Blue Cheese Sauce: Combine sour cream, blue cheese, chives, salt, and pepper until creamy.
  7. Serve: Drain chicken bites on paper towels and serve with toothpicks and blue cheese sauce.
