  • 2 cups Chickpeas canned or cooked from dried
  • 1 medium Onion finely chopped
  • 2 cloves Garlic minced
  • 1 cup Fresh Parsley chopped
  • 1 cup Fresh Cilantro chopped
  • 1 whole Lemon zest and juice
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Paprika
  • to taste Salt
  • to taste Pepper
  • 1 cup Breadcrumbs gluten-free if desired
  • 1 large Egg or flax egg for vegan option
For the Yogurt Sauce
  • 1 cup Plain Yogurt Greek or dairy-free
  • 1 tablespoon Dill or Mint optional
  • to taste Additional Lemon Juice

Method
 

Step-by-Step Instructions
  1. Mash the chickpeas in a large mixing bowl until mostly smooth, retaining some texture.
  2. Add the finely chopped onion, minced garlic, fresh parsley, cilantro, lemon zest, lemon juice, ground cumin, paprika, salt, and pepper to the mashed chickpeas. Stir until well combined, then incorporate the breadcrumbs and the egg.
  3. Shape the mixture into palm-sized discs, about ½ inch thick.
  4. Heat olive oil in a non-stick skillet over medium heat. Fry each side of the patties for about 4-5 minutes until golden brown and crispy.
  5. Whisk together the plain yogurt, minced garlic, additional lemon juice, salt, and pepper until smooth.
  6. Serve the patties warm, drizzled with yogurt sauce or on the side.
