- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out the puff pastry sheets until smooth and about 1/8 inch thick.
- Cut each pastry sheet into four equal squares, giving you a total of eight squares.
- Whisk together one egg and a splash of milk to create an egg wash.
- Layer a slice of ham followed by cheese on each pastry square. Optionally, add a smear of Dijon mustard.
- Sprinkle salt and pepper over the fillings, adding fresh herbs if using.
- Place a second pastry square over the filled square and seal the edges.
