Step-by-Step Instructions
  1. Slice the eggplant into ⅓" thick rounds and sprinkle with salt. Let sit for 20 minutes.
  2. Combine breadcrumbs, Parmesan, Italian seasoning, and garlic powder in a bowl. Mix well.
  3. Rinse salted eggplant, pat dry. Dip in flour, then beaten eggs, then breadcrumb mixture.
  4. Preheat air fryer to 380°F. Arrange eggplant in a single layer. Cook for 5 minutes, flip, then cook for another 5-7 minutes until golden and crispy.
  5. Remove eggplant and let cool slightly. Serve warm with marinara sauce.
