- Heat 2 tablespoons of extra virgin olive oil in a large skillet over medium-high heat. Once the oil shimmers, add 1 diced onion and sauté for about 5 minutes until it's soft and translucent.
- Stir in 3 minced garlic cloves and sauté for an additional minute until fragrant. Sprinkle in 1 teaspoon of Italian seasoning, salt, and black pepper to taste.
- Pour in 2 cups of passata (tomato sauce) and stir well to combine. Lower the heat to a simmer and cook for about 10 minutes.
- While the sauce simmers, bring a large pot of salted water to a boil. Add 12 ounces of rigatoni pasta and cook according to the package instructions until al dente.
- Once the sauce has thickened, remove it from the heat. Stir in 1 cup of grated Parmesan cheese and a handful of chopped fresh basil until fully combined.
- Slowly incorporate 1 cup of ricotta cheese into the sauce, stirring gently until creamy.
- Add the cooked rigatoni to the sauce in the skillet, tossing gently to combine everything evenly.
- Plate the Tomato Ricotta Pasta immediately, garnishing with extra grated Parmesan and fresh basil.
