- In a large Dutch oven over medium heat, add your chopped bacon and cook until crispy, about 5 minutes. Use a slotted spoon to transfer the bacon to a paper towel-lined plate, leaving the drippings in the pot.
- Add the diced yellow onion and celery to the bacon drippings in the Dutch oven. Sauté for 3 minutes until softened and fragrant, then stir in the fresh corn and cook for another 4 minutes.
- Pour in the chicken broth to the pot, bringing it to a gentle simmer. Add the cubed russet potatoes along with kosher salt, black pepper, and other seasonings. Let it simmer for about 10 minutes, or until the potatoes are tender.
- Stir in the sliced zucchini and yellow squash, cooking for an additional 10-12 minutes until the squash is tender.
- Ladle about 2 cups of the chowder into a blender and purée until smooth. Return the blended mixture back into the pot, stirring it well. Then add the half and half, remove from heat, and let it sit for 10 minutes.
- Allow the chowder to rest for a few moments before serving. Ladle the Summer Corn and Zucchini Chowder into bowls.
