- In a large mixing bowl, combine rolled oats, milk, and Greek yogurt. Add honey, vanilla extract, and chia seeds. Stir until creamy, about 2 minutes.
- Wash and chop fresh strawberries. Fold them into the oat mixture, reserve some for garnishing later.
- Spoon mixture into two mason jars, placing reserved strawberries on top. Seal the jars.
- Chill in the refrigerator for at least 4 hours, preferably overnight.
- Remove from refrigerator, stir gently, and top with additional strawberries or honey if desired.
