- Bring a large pot of salted water to a boil. Cook lasagna noodles according to package instructions until al dente, about 8-10 minutes. Drain and lay flat on parchment paper or a clean kitchen towel.
- In a large mixing bowl, combine shredded chicken, ricotta cheese, salt, Italian seasoning, onion powder, and garlic powder. Stir until well combined and creamy.
- Lay one lasagna noodle flat. Spread about 3 ounces of chicken mixture over it, leaving the top third bare. Drizzle 1-2 tablespoons of Alfredo sauce over the filling.
- Roll the lasagna noodle tightly from the end with the filling towards the bare end. Repeat with remaining noodles and filling.
- Preheat oven to 350°F (175°C). Spread 1/4 cup of Alfredo sauce evenly in a 9x13 inch casserole dish. Place rolled noodles seam-side down in the dish. Pour remaining Alfredo sauce over the rolls and add shredded mozzarella and Parmesan cheese on top.
- Cover the dish with aluminum foil and bake for 20 minutes. Remove foil and bake for another 10 minutes until bubbly and golden brown.
