Method
 

Step-by-Step Instructions
  1. Peel and chop the butternut squash, potato, and carrot into uniform pieces, roughly 1-inch in size.
  2. In a large pot, bring salted water to a boil over high heat and add the chopped vegetables and cashews. Cook for about 12 minutes until fork-tender.
  3. In a high-speed blender, combine the drained vegetables, cashews, smoked paprika, turmeric, olive oil, nutritional yeast, lemon juice, and a sprinkle of salt. Blend until smooth and creamy.
  4. In the same pot, bring fresh salted water to boil again and cook the macaroni pasta according to the package instructions.
  5. Pour the butternut squash sauce over the drained macaroni and stir well to combine.
  6. For a baked version, transfer to a casserole dish, top with vegan cheese shreds and panko breadcrumbs, and bake at 375°F for 15-20 minutes.
