  • 1 tablespoon Extra Virgin Olive Oil Can substitute with avocado oil.

  • 1 teaspoon Tajin or Trader Joe's Everything but the Elote Seasoning Blend Use chili powder or taco seasoning if unavailable.
  • 4 ounces ⅓ less-fat Cream Cheese Can substitute with regular cream cheese for a richer dip.
  • ¼ cup Light Sour Cream Greek yogurt can also be used for additional protein.
  • 7 ounces Cotija Cheese, grated Offers a salty, crumbly texture; feta or queso fresco can be used.
For Garnish
  • Fresh Cilantro, chopped Brightness from fresh herbs; parsley can be used if cilantro is not preferred.
  • Reserved Scallion Greens Adds a refreshing crunch and vibrant color to your dip.

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C). Adjust one rack to the center position and the other rack about 6 inches from the broiler.
  2. In a skillet, add 1 tablespoon of extra virgin olive oil over medium heat. Warm up the oil until it glistens.
  3. Add the chopped scallions to the hot oil with a pinch of salt and sauté for about 2–3 minutes until softened.
  4. Stir in 16 ounces of frozen corn kernels and 1 teaspoon of Tajin, sauté for 3–5 minutes until heated through.
  5. Incorporate 4 ounces of reduced-fat cream cheese, then fold in ¼ cup of light sour cream and ¾ cup of grated Cotija cheese until well combined.
  6. Transfer the skillet to the oven and bake for 10–12 minutes until the edges are bubbly and slightly brown.
  7. After baking, turn on the broiler and sprinkle reserved Cotija cheese over the top. Broil for 2–3 minutes until golden brown.
  8. Remove from the oven, garnish with reserved scallion tops and chopped fresh cilantro, then serve with tortilla chips or veggies.
