- Preheat your oven to 350°F (175°C). Adjust one rack to the center position and the other rack about 6 inches from the broiler.
- In a skillet, add 1 tablespoon of extra virgin olive oil over medium heat. Warm up the oil until it glistens.
- Add the chopped scallions to the hot oil with a pinch of salt and sauté for about 2–3 minutes until softened.
- Stir in 16 ounces of frozen corn kernels and 1 teaspoon of Tajin, sauté for 3–5 minutes until heated through.
- Incorporate 4 ounces of reduced-fat cream cheese, then fold in ¼ cup of light sour cream and ¾ cup of grated Cotija cheese until well combined.
- Transfer the skillet to the oven and bake for 10–12 minutes until the edges are bubbly and slightly brown.
- After baking, turn on the broiler and sprinkle reserved Cotija cheese over the top. Broil for 2–3 minutes until golden brown.
- Remove from the oven, garnish with reserved scallion tops and chopped fresh cilantro, then serve with tortilla chips or veggies.
