Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the finely chopped onion, 1 cup of shredded cheddar cheese, salt, and black pepper.
  3. Pour in the sour cream and cream of chicken soup into the cheese mixture and stir until smooth.
  4. Gently fold in the fully thawed hashbrowns and melted butter.
  5. Grease a 9x13-inch baking dish and pour the hashbrown mixture into the dish.
  6. Sprinkle the remaining 1 cup of shredded cheddar cheese over the top.
