Method
 

Cooking Steps
  1. Preheat your oven to 350°F (175°C).
  2. In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add finely chopped onions and bell peppers, sauté for 3-4 minutes until softened and fragrant.
  3. Add in 2 cups of fresh spinach. Cook for an additional 2-3 minutes until wilted. Season with garlic powder, salt, and pepper.
  4. In a large bowl, whisk together 4 eggs, 1 cup of milk, and 1 cup of well-drained cottage cheese until smooth. Stir in 1 teaspoon of Italian seasoning.
  5. Fold the sautéed vegetable mixture into the egg base, then add in 1 cup of shredded cheese, folding it in gently.
  6. Grease a 9-inch pie dish with olive oil. Pour the mixture into the dish, smoothing the top.
  7. Bake for 40-45 minutes until golden brown on top and set in the center.
  8. Cool for 5-10 minutes before slicing. Serve warm or at room temperature.
