Ingredients

  • 12 ounces Rigatoni Pasta can be swapped for penne or ziti
For the Steak
  • 1 pound Steak (Sirloin or Ribeye) cut into bite-sized pieces
For the Sauce
  • 2 tablespoons Olive Oil use extra virgin for better flavor
  • 1 medium Onion can substitute with shallots
  • 1 medium Bell Pepper any color will work
  • 3 cloves Garlic minced, fresh preferred
  • 1 cup Heavy Cream can replace with half-and-half
  • 4 ounces Blue Cheese adjust to taste
  • 1 teaspoon Dried Oregano fresh oregano can be used
  • to taste Salt & Black Pepper essential seasonings
For the Topping
  • 2 cups Mozzarella Cheese shredded
  • 2 tablespoons Fresh Parsley chopped, for garnish

Method
 

Step‑by‑Step Instructions
  1. Boil the Pasta: Bring a large pot of salted water to a boil over high heat. Add the rigatoni pasta and cook for 10-12 minutes until al dente. Drain and set aside.
  2. Sear the Steak: In a skillet, heat olive oil over medium-high heat. Add steak pieces and sear for 3-4 minutes until browned. Remove and keep warm.
  3. Sauté the Vegetables: In the same skillet, add onion and bell pepper. Sauté for 5 minutes until softened. Add minced garlic and cook for an additional minute.
  4. Make the Creamy Sauce: Lower heat and pour in heavy cream, stirring to deglaze the pan. Mix in crumbled blue cheese, oregano, salt, and pepper. Cook for 3-4 minutes until thickened.
  5. Combine Steak and Pasta: Return steak to the skillet with sauce, followed by rigatoni. Toss together for 1-2 minutes until fully coated.
  6. Transfer to Baking Dish: Preheat oven to 375°F (190°C) and layer the mixture into a greased baking dish. Top with mozzarella cheese.
  7. Bake to Perfection: Bake for 15-20 minutes until cheese is melted and golden. Keep an eye on it as it bakes.
  8. Garnish and Serve: Let cool for a few minutes and garnish with parsley before serving.
