Ingredients
  

Dressing
  • 0.25 cup Mayonnaise or Plain Greek Yogurt Substitute with avocado or vegan mayo for a lighter option.
  • 1 tablespoon Extra-Virgin Olive Oil Any mild oil can work in a pinch.
  • 0.5 cup Fresh Lemon Juice Fresh lime juice can also be used for a zesty twist.
  • 1 teaspoon Dijon Mustard Yellow mustard is a great alternative.
  • Kosher Salt and Black Pepper Adjust to taste.
  • Hot Sauce (optional) Add a few dashes or replace with a pinch of cayenne.
Salad
  • 15 oz Canned Chickpeas Rinse well before use.
  • 5 oz Canned Tuna Packed in water, swap with chickpeas for vegetarian.
  • 3 tablespoons Finely Chopped Celery Bell pepper can be substituted.
  • 2 tablespoons Minced Red Onion Green onions or shallots can also be used.
  • 2 tablespoons Fresh Dill Use dried dill or parsley if fresh is not available.
  • 1 tablespoon Capers, Green Olives, or Relish Can omit or replace with pickles.

Method
 

Preparation
  1. Whisk together mayonnaise or Greek yogurt, olive oil, lemon juice, Dijon mustard, salt, pepper, and hot sauce in a mixing bowl.
  2. Open, drain, rinse, and pat dry chickpeas; optionally mash half for a creamy texture.
  3. Combine chickpeas, drained tuna, celery, red onion, capers or olives, and dill in a large mixing bowl.
  4. Drizzle dressing over salad and gently fold to combine.
  5. Chill in the fridge for about 30 minutes before serving.
