Method
 

Step by Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
  2. Finely chop a mixture of your favorite vegetables (spinach, bell peppers, zucchini).
  3. In a large bowl, mix chopped vegetables with ricotta, half of the mozzarella, Parmesan, garlic powder, onion powder, Italian seasoning, salt, and pepper.
  4. On a floured surface, roll out the puff pastry to about 1/8 inch thick and cut into rectangles (approximately 4x6 inches).
  5. Place a spoonful of the veggie filling at one end of each pastry rectangle and roll, sealing the edges securely.
  6. Beat the egg and brush it over the tops of the pastries for a golden finish.
  7. Arrange the rolls on the baking sheet and bake for about 25 minutes or until golden brown.
  8. Let the rolls cool slightly before serving warm with your favorite dipping sauce.
