Step by Step Instructions
- Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
- Finely chop a mixture of your favorite vegetables (spinach, bell peppers, zucchini).
- In a large bowl, mix chopped vegetables with ricotta, half of the mozzarella, Parmesan, garlic powder, onion powder, Italian seasoning, salt, and pepper.
- On a floured surface, roll out the puff pastry to about 1/8 inch thick and cut into rectangles (approximately 4x6 inches).
- Place a spoonful of the veggie filling at one end of each pastry rectangle and roll, sealing the edges securely.
- Beat the egg and brush it over the tops of the pastries for a golden finish.
- Arrange the rolls on the baking sheet and bake for about 25 minutes or until golden brown.
- Let the rolls cool slightly before serving warm with your favorite dipping sauce.
