  • 2 cups Fresh Spinach

  • 1 medium Onion Red or yellow, chopped
  • 1 cup Cheddar or Monterey Jack Cheese Dairy-free cheese as an alternative
For Seasoning
  • 1 teaspoon Cumin
  • 1 teaspoon Garlic Powder
For the Egg Wash
  • 1 large Egg Whisked with a little water

Method
 

Preparation Steps
  1. Preheat the oven to 375°F (190°C) and prepare a baking sheet lined with parchment paper.
  2. Sauté chopped onions in olive oil over medium heat until translucent, about 5 minutes.
  3. In a bowl, combine sautéed onions, spinach, cheese, salt, and pepper to prepare the filling.
  4. Roll out the pastry dough to 1/4 inch thick, cutting it into squares or rectangles.
  5. Place a tablespoon of filling in the center of each pastry, fold, and seal edges.
  6. Brush tops with the egg wash for a golden finish.
  7. Bake for 25-30 minutes until pastries are golden-brown.
  8. Let cool for 5 minutes before serving.
