Ingredients
  

For the Pasta
  • 8 ounces Spaghetti gluten-free option available
For the Sauce
  • 4 tablespoons Unsalted Butter or substitute with olive oil
  • 3 cloves Garlic minced or grated
  • 1/4 teaspoon Red Pepper Flakes optional
  • 1 whole Lemon juiced
For the Veggies
  • 4 cups Baby Spinach frozen can be used if well-drained
For the Finish
  • 1/2 cup Parmesan Cheese freshly grated, or nutritional yeast for dairy-free
  • to taste Salt adjust as needed
  • to taste Black Pepper freshly ground is best

Method
 

Cooking Instructions
  1. Boil a large pot of salted water and cook the spaghetti according to package instructions, about 9-10 minutes. Reserve 1 cup of the cooking water, then drain the spaghetti.
  2. In a skillet, melt butter over medium heat. Stir in minced garlic and red pepper flakes. Cook for 1-2 minutes until fragrant.
  3. Add the lemon juice and reserved pasta water to the skillet. Bring to a gentle bubble for 1-2 minutes.
  4. Add the drained spaghetti and baby spinach. Toss with tongs for about 2-3 minutes until the spinach wilts.
  5. Remove from heat and stir in lemon zest, Parmesan cheese, salt, and black pepper. Serve immediately.
