  • 1 cup Brown Sugar
  • 1/2 cup Granulated Sugar
  • 1 large Egg
  • 1/4 cup Molasses
  • 1 1/2 cups All-Purpose Flour
  • 3 cups Rolled Oats
  • 1 tablespoon Cornstarch
  • 1 teaspoon Ground Cinnamon
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
For Add-ins
  • 1 cup Dried Cherries
  • 1 cup Chopped Walnuts Can substitute with pecans
  • 1 cup Dark Chocolate Chips

Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, oats, cornstarch, cinnamon, baking soda, and salt.
  3. In a larger bowl, cream together the butter, brown sugar, and granulated sugar until smooth and creamy.
  4. Mix in the egg and molasses until well combined.
  5. Gradually mix the dry ingredients into the wet ingredients until just blended.
  6. Fold in the dried cherries, walnuts, and dark chocolate chips.
  7. Portion out 1/3 cup of dough for each cookie, yielding about 8 large cookies.
  8. Arrange 4 cookie balls on each baking sheet with space in between.
  9. Bake for 15 minutes, then gently press down the centers and return for 3-5 minutes more.
  10. Cool on baking sheets for a few minutes before transferring to a wire rack.

Notes
