- In a blender or food processor, combine the plain Greek yogurt, fresh lemon juice, mustard, extra virgin olive oil, fresh mint leaves, fresh parsley leaves, and fresh oregano leaves. Blend until smooth and creamy, about 30 seconds. Season dressing with salt and pepper to taste.
- Thoroughly wash the super greens mix and kale, removing any dirt. Pat dry with a kitchen towel or salad spinner. Rinse strawberries, blackberries, and blueberries under cold water. Set aside to dry completely.
- In a large mixing bowl, add super greens mix, chopped kale, and the fresh berries. Toss gently until well combined.
- Sprinkle chopped pistachios and pepitas over the greens and berries. Crumble the blueberry goat cheese on top, then gently toss again.
- Drizzle the creamy lemon herb dressing over the salad and toss gently to coat all ingredients evenly.
- Transfer the salad to a serving bowl or plates. Optionally, grind fresh pepper over the top and serve immediately.
