For the Casserole
  • 3 cups Zucchini, sliced
  • 2 cups Spinach, chopped fresh or well-drained if frozen
  • 1 cup Feta Cheese, crumbled
  • 1 cup Ricotta Cheese
  • 3 Eggs
  • 1 cup Breadcrumbs can be gluten-free
  • 1/2 cup Parmesan Cheese, grated
  • 2 tablespoons Olive Oil
  • 3 cloves Garlic, minced
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • to taste Salt
  • to taste Pepper
  • 1 tablespoon Butter, for greasing
For the Topping
  • 1 cup Breadcrumbs can be gluten-free
  • 1/2 cup Parmesan Cheese, grated

Method
 

Baking Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Grease a 9x13-inch baking dish with butter.
  3. In a large mixing bowl, combine sliced zucchini, chopped spinach, and minced garlic. Drizzle with olive oil and toss to coat.
  4. In another bowl, whisk together ricotta cheese, eggs, crumbled feta, oregano, basil, salt, and pepper until smooth.
  5. Spread half of the vegetable mixture in the greased dish.
  6. Spoon half of the cheese mixture over the vegetables.
  7. Layer the remaining vegetable mixture and top with the rest of the cheese mixture.
  8. Combine breadcrumbs with Parmesan cheese and sprinkle over the casserole.
  9. Bake in the preheated oven for 35-40 minutes until golden brown and bubbling around the edges.
  10. Remove from oven and cool for 10 minutes before serving.
