  • 6 large Eggs fresh eggs yield the best results
  • 1 cup Heavy Cream can substitute with milk for a lighter version
  • 1 cup Shredded Cheese Cheddar or Gruyere recommended; mozzarella or feta can also work
  • 1 tsp Salt use sea salt for a more complex taste
  • 1/2 tsp Black Pepper freshly cracked is preferred
  • 1 tsp Fresh Thyme can replace with dried thyme or omit if not available
  • 2 tbsp Fresh Chives green onions can be a substitute
For the Base
  • 1 sheet Puff Pastry substitute with phyllo dough but expect a different texture
  • 2 tbsp Butter for greasing; can use cooking spray as an alternative
For the Garnish
  • 2 tbsp Fresh Parsley optional for a beautiful presentation

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C).
  2. On a floured surface, roll out the puff pastry until 1/4 inch thick and cut into rectangles.
  3. Grease the baking dish or ramekins with butter or cooking spray.
  4. Arrange the puff pastry in the greased baking dish, shaping to fit snugly.
  5. Whisk together the eggs, heavy cream, salt, pepper, thyme, and chives until well combined.
  6. Gently fold in the shredded cheese, reserving some for topping.
  7. Pour the egg mixture into the prepared pastry shells, just beneath the rim.
  8. Sprinkle the reserved cheese over the top of each filled pastry.
  9. Bake in the preheated oven for 25-30 minutes until golden brown.
  10. Let cool for 5-10 minutes and garnish with fresh parsley before serving.
