- Preheat your oven to 400°F (200°C) and prepare a baking sheet with nonstick cooking spray.
- In a medium bowl, whisk together all-purpose flour, baking powder, kosher salt, and ground cinnamon.
- In a large bowl, melt unsalted butter and whisk it with granulated sugar. Then add egg, vanilla extract, and applesauce.
- Fold the dry ingredients into the wet ingredients until just combined, then gently fold in the apples.
- Scoop portions of the batter onto the prepared baking sheet, spacing them apart.
- Bake for 10 minutes, until golden and a toothpick comes out clean.
- While baking, whisk together powdered sugar and apple cider or juice in a bowl for the glaze.
- After baking, switch the oven to broil. Brush the fritter bites with glaze and broil for 2-4 minutes.
- Remove from oven, brush with remaining glaze, and allow resting at room temperature for 15 minutes.
