Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet with nonstick cooking spray.
  2. In a medium bowl, whisk together all-purpose flour, baking powder, kosher salt, and ground cinnamon.
  3. In a large bowl, melt unsalted butter and whisk it with granulated sugar. Then add egg, vanilla extract, and applesauce.
  4. Fold the dry ingredients into the wet ingredients until just combined, then gently fold in the apples.
  5. Scoop portions of the batter onto the prepared baking sheet, spacing them apart.
  6. Bake for 10 minutes, until golden and a toothpick comes out clean.
  7. While baking, whisk together powdered sugar and apple cider or juice in a bowl for the glaze.
  8. After baking, switch the oven to broil. Brush the fritter bites with glaze and broil for 2-4 minutes.
  9. Remove from oven, brush with remaining glaze, and allow resting at room temperature for 15 minutes.
