Preparation Steps
  1. Gather all the ingredients for the Asian cucumber salad including fresh English cucumbers, white sugar, garlic, green onions, soy sauce, rice vinegar, chili oil, sesame oil, sesame seeds, and salt.
  2. In a medium mixing bowl, combine granulated white sugar, sesame seeds, crushed garlic, and chopped green onion. Pour in soy sauce, rice vinegar, chili oil, and sesame oil, then whisk together until the sugar dissolves.
  3. Cut both ends off each cucumber to create a flat base. Using chopsticks, make diagonal cuts along each cucumber to create an accordion effect.
  4. Sprinkle the spiral-cut cucumbers with salt and massage gently. Let them rest for 8-10 minutes then rinse and pat dry.
  5. In a large bowl, toss the salted cucumber spirals with the dressing until evenly coated.
  6. Chill in the refrigerator for about 10 minutes before serving for the best flavor.
