  1. Heat the oil in a large skillet over medium heat until shimmering.
  2. Add chopped onion and diced bell peppers. Cook for about 5 minutes, until softened.
  3. Stir in minced garlic and ginger, sauté for about 1 minute until fragrant.
  4. Sprinkle in cumin, turmeric, coriander, paprika, cayenne, and garam masala. Stir and let simmer for 30 seconds.
