Cooking Steps
- Prepare Marinade: Whisk together shoyu, mirin, sake (if using), sugar, sliced ginger, and minced garlic until well combined. Reserve 1/4 cup for glazing.
- Marinate Chicken: Add chicken thighs to the marinade, coat well, cover, and refrigerate for at least 2 hours (up to overnight).
- Preheat Air Fryer: Preheat the air fryer to 380°F (193°C) for even cooking.
- Make Teriyaki Glaze: Heat reserved marinade in a saucepan, mix cornstarch with water to create a slurry, add and stir until thickened.
- Cook Chicken: Spray air fryer basket, place chicken in a single layer, air fry for 6 minutes, flip, brush with glaze, and cook for an additional 5-6 minutes until internal temperature reaches 165°F (74°C).
- Serve: Allow chicken to rest for a few minutes, slice if desired, serve over rice or with steamed vegetables, drizzled with remaining glaze.
